Shrimp Wonton Soup

Ingredients
- 1/2 lb shrimp, finely chopped
- 24 wonton wrappers
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp cornstarch
- 6 cups chicken or seafood broth
- 2 slices ginger
- 1 green onion, chopped
- Crispy fried shallots for topping
- White pepper to taste
- Salt to taste
Instructions
- Mix chopped shrimp with soy sauce, sesame oil, cornstarch, and white pepper.
- Place 1 teaspoon filling in center of each wonton wrapper.
- Fold wrapper in half diagonally, then bring two corners together and press to seal.
- Bring broth to boil with ginger slices.
- Add wontons to boiling broth and cook until they float and are cooked through, about 5-7 minutes.
- Ladle soup into bowls and top with crispy fried shallots and fresh scallions.
- Serve immediately while hot.
