Ingredients

  • Fresh whole fish (anchovies, sardines, or similar small fish)
  • Sea salt
  • Sunlight

Instructions

  1. Clean and gut fresh fish, removing scales and entrails.
  2. Rinse thoroughly in saltwater or fresh water.
  3. Salt the fish generously inside and out.
  4. String fish together through the gills or eyes.
  5. Hang on drying racks in direct sunlight with good air circulation.
